Well, my mom was a grammar nazi (and an English teacher) and I spent most of my youth getting my grammar corrected. But even she allowed "poetic license" when it came to art. And having been born and raised on the south side of Chicago, I can tell you that "should of" is definitely a thing there. Right or wrong, it's true to the spirit of the song, and the city.
