Happy T-Day everyone! Now I just have to figure out what to do with the remaining 10 lbs of bird and all the fixin's. Peski had 3 small pieces but Squeaky wouldn't even try it. Guess I see a lot of turkey chili in my near future...
Oh and Egg Nog and DIY coffee liquor is great except for the massive headache a couple hours later.

Wife was very excited to take the reins this year. Did hours of research (cooking's not her thing) and got a nice little bird and stuff for the side dishes. My job yesterday: take the defrosted bird and get it in the brine so she could cook it today.

Which I did. Although I forgot to refrigerate it.
So it sat on the counter in our house - which was assuredly not below 40 degrees.
And when she came home from work...we had to throw it out.

Origin story from wikipedia:
A common legend of its creation takes place at the Convent of Santa Rosa in Puebla early in the colonial period. Upon hearing that the archbishop was going to visit, the convent nuns went into a panic because they were poor and had almost nothing to prepare. The nuns prayed and brought together the little bits of what they did have, including chili peppers, spices, day-old bread, nuts, and a little chocolate. They killed an old turkey, cooked it and put the sauce on top; the archbishop loved it. When the nun was asked the name of the dish, she replied, "I made a mole." Mole was the ancient word for mix; now this word mostly refers to the dish, and is rarely used to signify other kinds of mixes in Spanish. 

 
You will just have to try it, then. I recommend a young turkey, though.

Huh. I just googled it and all the big recipe sites have a recipe for it. I have literally never heard of or considered turkey in Mexican food before. I still don't know

One of my best friends gets to hang out with Arlo once a year when he plays his venue.  They go to the top of the belltower at the historic building and umm you know take a smoke break.{#Cowboy}  Arlo is one of his favorite shows and people.
