Because "the establishment" is such a squishy concept that everybody gets to define it any way they like.
There are many different forms of power and many different people wielding it, all with different points of view. Characterizing some group of them as "the establishment", as if they were a monolith and the only center of power is lazy sophistry.
does it work that way with "the resistance" too?
because if it does...
It's disingenuous to assert that the ex-President of the United States isn't part of the Establishment. He's not a respected part of it, but that's a different question.
He can be elite (because it takes one to know one...), but he's not part of the establishment. He's a billionaire average Joe. A stable genius who relates with the average guy on the street. Born a millionaire, yet he understands your struggles. He's a real man's man (ask Arnie), but the ladies all love him. He's George Clooney, Warren Buffett, Hulk Hogan and Tom Hanks all in one amazingly bronze package.
That said, Trump is a lot of things but The Establishment ? He is anything but.

If Trump is the establishment, then why is the establishment fighting so hard to keep him from getting elected ?

I'll give you that.

Trump is an ex-president funded by billionaires. He IS the establishment - just packaged to make people like you think he's not so they can keep milking the system.

OBTW ... Harris currently has $1 Billion in her campaign fund with three weeks to go.

There's a bird called the Canvasback Duck
edit: No, I don't know what irony means. Maybe this should go in the Oxymorons thread, but that name makes me self-conscious.
