Definitely start with Thai Red curry and Pad Thai. If you are a fan of rice, you can get Khao Pad (fried rice).

Pad See Ew (sp?) rocks too. Go a few times to see how they describe their heat index. And don't expect consistency - around here 4 star on Tuesday can be pleasantly sparky, but on Thursday a 2 star can be nearly impossible to eat.  I settle for 3s on average and then add chili oil if needed.

Love me some pad thai, also some tom yum soup. Curry is great and if you don't like heat, get a pineapple curry, it won't be as spicy. Our local joint also serves something called curry puffs... delish! And most certainly try some thai iced tea, it's to die for. After you get familiar with the wonderful flavors and fragrances of basil, ginger, curry, coconut, and cilantro, be more adventurous and delve deeper into the menu, you won't be disappointed. Thai food is total comfort food, for us, more than chicken soup!

i'm fortunate to live in an area with a lot of great thai food

i like it all and i absolutely love the curry dishes

you can get it mild to hot (my fav) great with a cold singha beer

read up or watch a video and just go for it {#Hungry}

p.s. alton brown on pad thai

Second this, but don't be afraid of Thai curries either.

There are a gazillion regional dishes too, all worth exploring.

i'd say a good intro would be thai style spring rolls, and a nice pad thai, which is a noodle dish....which they can make with your choice of protein...chicken, beef, seafood, or tofu
